For a MUCH better list of samples used in hip-hop, check out the The Breaks. For other lists of house music samples, check out Metasoul, Serious Disco (good but given to spelling errors), or Housesamples.com. If you want to start sampling yourself, check out SampleNet.

For a good collection of sample sources on CD, check out Sampled, which includes loads of hard-to-track-down tracks (and to think I went to all that effort to buy them individually!). Although to be quibbly, they do tend to count remakes as "samples" and Lalo Schifrin gets his name misspelled.
